Extra virgin olive oil
Ardente olives are harvested at the beginning of November and pressed immediately.
On the nose, the pure fruit juice obtained has sublime scents of greenery and green pepper. In the mouth, the attack is very smooth and coats the palate well. These are then notes of raw artichokes and green bananas. At the end of the mouth, a delicate spiciness completes the tasting.
It benefits from being combined with raw vegetables, a fish or fruit carpaccio (Solies figs for example, with a nice fleur de sel and a hint of Espelette pepper).
