Virgin olive oil
Quintessence olives are harvested at the beginning of November and matured immediately.
They will be pressed only a few days later, as is tradition in Provence. Thanks to this maturation, they will lose a little of their ardor, without limiting their nutritional qualities, but will gain in olfactory intensity.
On the nose, the pure fruit juice obtained has sublime aromas of black olives and confectionery. On the palate, the attack is very delicious. These are then notes of black olives and propolis. The finish is very soft, elegant, with great length, and finally a slight spiciness to remind you of its nutritional virtues.
We recommend pairing it with meats and game, spicy dishes, but also a Niçoise salad or pan-bagnat, in the pure Provençal tradition.
