Ingredients for 4 persons
25g of lime juice, 35g of honey, 75g of Cuvée ARDENTE olive oil, a little grated lime.
Realization
- Dilute the honey with the lime juice.
- Using a whisk, create an emulsion by incorporating the olive oil in a thin stream into the lemon-honey mixture.
- Add a grated lime and season as desired.
- Be sure to let sit for 1 hour at room temperature before serving.
You can vary the flavors by replacing the juice and zest with other citrus fruits such as yuzu, grapefruit, etc.
The recipe goes wonderfully with raw vegetable shavings, a fresh seasonal salad, a plate of shrimp or even a raw fish tartare, etc.
